- 4 tablespoons unsalted butter
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 bananas
- 1 cup oats
- 1 cup flour
- 1/2 cup brown sugar
- 1/2 cup chocolate chips
Preheat oven to 400°F.
Grease muffin pan. (Makes 12 muffins.)
In a large bowl, add butter, bananas, brown sugar and flour. Mix with hand mixer until combined.
Add cinnamon, vanilla, baking soda, baking powder, and salt. Mix until combined.
Using a wooden spoon, mix in the oats (and chocolate chips) until evenly combined.
Distribute evenly into muffin pan. Bake for 15-17 minutes and enjoy!
