- 1 3/4 cups flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup shortening
- 2/3 cup sugar
- 2 eggs
- 2-3 bananas, mashed (approximately one cup)
- 1/2 teaspoon flax and chia seed mix
Preheat oven to 350˚F.
Grease 9 x 5 bread pan.
In a small bowl, mix flour, baking powder, baking soda, and salt. Set aside.
In a large mixing bowl, beat the shortening and sugar together until combined. Then add the egg and beat together until creamy.
Slowly add the flour mixture to the large mixing bowl. Once combined, add the mashed bananas. Mix until smooth.
Pour into pan and bake for approximately 1 hour. Cool in pan for 10 minutes and then remove onto rack. Enjoy!
